Coffee drink of Italian cuisine based on espresso with the addition of milk and milk foam. The name of the drink came, presumably, from the monastic order of capuchins because of the similar color of cappuccino and their cassocks. According to another version, the name cappuccino came from nasturtium, or because of the shape of the served coffee cups, reminiscent of flower buds.
To make a cappuccino, you need to make regular espresso and pour it into a large cup. A Panarello nozzle should be placed in a vessel with milk – this is the nozzle from which the steam comes, then froth the milk and carefully put the foam in an espresso cup. The ratio of espresso and milk foam is calculated as 1: 2.
Latte coffee is a coffee drink that consists of one part of espresso, three parts of milk and a small amount of foam. It is customary to add various syrups to this coffee: vanilla, caramel or any others.
Even though the amount of milk should outweigh the coffee, it is poured first and always hot. After that, espresso is poured into a thin stream. Only this procedure should be performed especially carefully so that the layers do not mix, and an aromatic latte is obtained. The best option for making such coffee is to infuse hot coffee at the last moment, passing it through a delicate foam.
To make milk foam, you can’t do without a milk frother, it is necessary to remember that the best foam is obtained from whole milk, and not from skim.
You can supplement such coffee with various syrups, but not citrus, from which milk quickly turns sour. The foam is often sprinkled with grated chocolate, cocoa powder or cinnamon. But you can also make an alcoholic cocktail, with the addition of rum or liqueur. Serve this coffee in transparent glasses, in which you will see the whole layering of the drink. You can serve in a glass with a straw, which also looks original.
Relatively recently, a new star has appeared on the coffee beverage market, which is rapidly gaining fans from all known milk and coffee variations. The name of this coffee is Flat White.
At the heart of this type of coffee are a double espresso and a small portion of milk. Due to this, the drink retains a milky taste, but at the same time, we can distinguish the taste of the coffee.
The official Flat White is:
- 2oz double espresso;
- Approx. 4oz of milk whipped when heated;
- average cup volume.
Each barista has its special secrets when making this coffee, but minimum milk foam and an intense balanced taste of drink and milk must be mandatory.
What coffee beans should you use for the perfect espresso?
Espresso coffee is almost always a mixture of several types of beans. The barista calls it a hood. In Italian, the mixture is called “miscela”.
A variety of coffee varieties provides ample opportunities for creating blends. At the same time, the basic rules for creating a blend for espresso are as follows: coffee should have a muffled acidity, be full-bodied and sweet enough to balance the bitterness and acid in the taste of the finished drink.
As for single-origin (coffee of the same variety, grown in a single locality and one season), in its pure form, most of them are not suitable for making espresso. This is because a single origin has a “one-sided” taste and does not have the balance and a bouquet inherent in blends.
As a rule, espresso mixes are made from various varieties of Arabica. However, in some cases they use Robusta. Arabica and Robusta are considered separate types of the coffee tree. Robusta has a higher yield, has large areas of cultivation and is therefore much cheaper than Arabica.
Can you make espresso without a machine?
You can make espresso with a cezve. Pour ground coffee grains of water (at the rate of 2 tsp. To 4oz of water), put on fire. Bring to a boil, but do not boil. When the foam begins to rise, remove the cezve from the fire and be patient – wait until the foam settles. Repeat this procedure 5-6 times – only this way the coffee will turn out to be strong, with a rich taste.
Why are espresso machines so expensive?
The cost of the espresso machine is influenced by its complex design and the materials from which it is made. First of all, the price is determined by the number of distributing groups – this is an important unit of a machine through which heated water enters the holder. The more coffee you need to prepare, the more groups you need, but one will be enough for a home espresso machine.
Secondly, the price is affected by the number of boilers in the machine. The presence of one boiler allows you to make espresso, and two – espresso and cappuccino at the same time. Also, the cost is affected by the ability to digitally configure the display. It is important to consider the assembly of the machine – it can be automated or manual. With manual assembly, parts are installed and tested by a person, and with a machine, this process is automated.
Typically, espresso machines are made from expensive materials, which significantly affects the price. The most expensive materials are tin and stainless steel. Also, the cost is determined by such nuances as the pressure that the espresso machine provides, and the temperature to which it can heat the water.
Can espresso machine make latte or cappucino?

Is a good grinder important for quality espresso?
When we make coffee, extraction takes place in an espresso machine, french press or mug – soluble substances are mixed with water. The extraction process reveals the tonic properties of the drink, the aroma, and the taste that we love so much.
It is important to stop extraction in time. If you do not brew coffee, the substances will not have time to open. If you re-extract, the coffee will be bitter.
How do I regulate the extraction to achieve a harmonious taste?
By grinding. The finer the grinding, the larger the contact area between coffee and water and the faster the extraction. The larger the grinding, the more time it takes for coffee to brew.
For espresso machines, the degree of grinding required is slightly finer than the average. It is called espresso grinding.
